Prepare the Quinoa:

  2. Cook quinoa in a pot with 2 cups of water. Bring to a boil, then reduce to a simmer, cover, and cook until quinoa is fluffy and water is absorbed (about 15 minutes). Set aside.

Prepare the Coconut Paste:

  1. In a blender, combine grated coconut, green chilies, and cumin seeds. Blend to form a smooth paste with a little water if needed. Set aside.

Cook the Vegetables:

  1. Heat coconut oil in a large pan over medium heat.
  2. Add cumin seeds and curry leaves, and sauté for a few seconds.
  3. Add chopped vegetables and turmeric powder. Sauté for a few minutes.

Combine Ingredients:

  3. Stir in the yogurt (or coconut yogurt) and cook for an additional 2-3 minutes. Adjust salt to taste.
