Total Time: 50 minutes
Servings: 4

Ingredients:

For the Avial:

  • 1 cup quinoa (uncooked)
  • 1 cup mixed vegetables (carrot, beans, potato, raw banana), chopped
  • 1 cup grated fresh coconut
  • 1/2 cup yogurt (or coconut yogurt for vegan)
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 2 green chilies, slit
  • 1 tablespoon coconut oil
  • Salt to taste
  • 1 sprig curry leaves

For the Coconut Paste:

  • 1/2 cup grated fresh coconut
  • 2 green chilies
  • 1 teaspoon cumin seeds

Instructions:

Prepare the Quinoa:

  1. Rinse the quinoa under cold water.
  2. Cook quinoa in a pot with 2 cups of water. Bring to a boil, then reduce to a simmer, cover, and cook until quinoa is fluffy and water is absorbed (about 15 minutes). Set aside.

Prepare the Coconut Paste:

  1. In a blender, combine grated coconut, green chilies, and cumin seeds. Blend to form a smooth paste with a little water if needed. Set aside.

Cook the Vegetables:

  1. Heat coconut oil in a large pan over medium heat.
  2. Add cumin seeds and curry leaves, and sauté for a few seconds.
  3. Add chopped vegetables and turmeric powder. Sauté for a few minutes.
  4. Pour in enough water to cover the vegetables, and cook until they are tender (about 10-12 minutes).

Combine Ingredients:

  1. Once vegetables are cooked, add the coconut paste to the pan. Stir well and cook for another 5 minutes.
  2. Reduce heat and mix in the cooked quinoa.
  3. Stir in the yogurt (or coconut yogurt) and cook for an additional 2-3 minutes. Adjust salt to taste.

Serve:

  1. Serve the Quinoa Avial warm as a side dish or main course with rice or flatbread.

Flavor-Enhancing Tips:

  • Use Fresh Coconut: Freshly grated coconut gives the Avial a richer and more authentic taste.
  • Add a Pinch of Asafoetida: For an extra layer of flavor, add a pinch of asafoetida to the tempering.
  • Vegan Option: Use coconut yogurt instead of dairy yogurt for a completely vegan version.
